Suitable for baked products, ready meals, meat products etc. The advantages of this product include its texture and emulsifying properties. A further advantage is the storage conditions, handling and shelf life of powder compared to other liquid products.
Whole egg powder is produced from hen egg by a process of spray drying and pasteurization (pasteurization temperature for melange – at least 65⁰С; product flow rate for melange – no more than 5025 l/h, the cooling temperature is not higher than 4⁰С). It should be free flowing powder, without any lumps (except from those that easily destroyed) and contaminates. It should be free from additives, preservatives or any antibiotics, pesticides, other hormones and metabolite residues.
Keep in a dry, dark and well ventilated area.
At 2 °С: 24 months in an unopened package.
At 20 °С:12 months in an unopened package.
